Low Food Session: Low Food Lab

On the 29th of November we will a small group of frontrunners, to jointly create the outlines and first steps in setting up a Low Food Lab in The Netherlands. Inspired and driven by culinary movements around the world, we are thrilled to share our ideas with you and discuss how a gastronomic lab and the collaborations between chefs, creatives, farmers, food producers and scientists can enhance food culture, sustainability and inclusivity, now and in the future. We can’t wait!   

Morning program 10:00 - 13:00 (small group)
During our morning session we welcome international frontrunners: chef Diego Prado Vásquez from Chile, former coordinator of BCulinaryLAB - the research kitchen of Basque Culinary Center in San Sebastian, Spain - and chef Ben Reade from Scotland, former Head of the Nordic Food Lab and founder of the Edinburgh Food Studio. Combining their knowledge with the ideas from the audience, we will sketch a first outline for a Low Food Lab in The Netherlands, that will be presented to a broader group of chefs, food producers, policymakers and journalists in the afternoon.

Afternoon program 13:00 - 17:00

We start the afternoon session with a spectacular lunch by some of the greatest Dutch chefs, who will give us a taste of what Low Food entails, followed by an inspirational keynote by Diego Prado Vásquez and reflections of Ben Reade. Further we will festively launch our jointly created plans for a Low Food Lab and invite all our guests to become a part of this adventure.
